Origins and journey of the Wush Wush coffee variety
The Wush Wush coffee variety is a rare heirloom native to the Wushwush area in the Kaffa highlands of southwestern Ethiopia. Situated at an impressive altitude of approximately 1,800 meters above sea level (masl), this region of origin possesses ideal terroir and climatic conditions that favor the development of ancient heirloom coffee varieties. The name of this coffee variety is derived directly from the geographic region where it was discovered.
Approximately three decades ago, the Wush Wush coffee variety was introduced from East Africa to South America, with Colombia as a prominent destination. There, through professional support from renowned coffee research institutes such as Cenicafe or via direct imports from Ethiopia, Colombian farmers adopted this variety and cultivated it in highland regions characterized by harsh but nutrient-rich climatic conditions. The excellent adaptation of Wush Wush to wide temperature ranges and fertile volcanic soils in Colombia has created specialty coffee growing areas of superior commercial value and quality.
Genetic structure and distinctive sensory potential
Thanks to its lineage from ancient Ethiopian heirloom varieties, the Wush Wush coffee variety possesses an exceptionally rich genetic diversity. This diverse genetic structure is key to enabling the coffee plant to synthesize complex organic compounds, which transform into unique aromatic precursors accumulated in the green bean.
In the specialty coffee community, Wush Wush is frequently compared to Gesha, the legendary coffee variety of the world. The cupping profile of Wush Wush is extremely rich and complex, with prominent characteristics:
- Florals: Prominent notes of captivating lavender and elegant white flowers.
- Berry and tropical fruit aromas: Distinct presence of blueberries and strawberries blended with ripe tropical fruits.
- Sweetness and body: Rich candy-like sweetness combined with a smooth body/mouthfeel, leaving a long and highly pleasant aftertaste.
The role of controlled-oxygen processing methods
The inherent flavor of the Wush Wush variety is already exceptional, but only when combined with modern processing techniques is its genetic potential fully exploited and amplified. Leading specialty coffee producers currently prioritize the application of controlled-oxygen fermentation methods (such as anaerobic or limited-oxygen fermentation).
The anaerobic fermentation process, lasting 100 to 150 hours in completely sealed tanks or bags, allows microorganisms to operate under oxygen-deprived conditions. The breakdown of sugars and mucilage occurs more slowly and deeply, producing rich organic acids and aromatic esters. This combination gives the finished coffee beans a bright acidity, pronounced ripe fruit flavors, and a unique flavor structure that consistently achieves extremely high scores on reputable evaluation platforms such as Coffee Review.
